This month we are diving right into Valentine's cookies! When you get this box you will most likely be making Christmas cookies, and won't want to think about Valentine's cookies. BUT... One thing you can try this year, is if you have any red icing leftover from Christmas, throw it in the freezer and then pull it out for Valentine's Day. Using an already deep red as a "starter" for more red icing can be super helpful. Just be sure to let it come to room temperature before you mix it into your fresh icing.
For this months set, I wanted to keep it fairly traditional, but fun too!
Be sure to check out the downloads available below for the cookie cutters graphics. You can use these for your projector or royal icing transfers to use for the chocolates and hearts.

I made a piping consistency and flood consistency for each color except the white and brown - I made a 15 second icing for those. If you are comfortable cutting and piping/flooding with tipless bags, go for it! If you prefer tips I would recommend a 1.5 tip for outlines and details, and a 2 for flooding.
Below you will find step by step instructions for our first 4 cookies. Followed by a video for the 5th. This is of course only if you want to replicate these cookies exactly. Feel free to have fun! Use different colors, or different techniques. Let your creativity shine if you want!
And remember that you can also use these same cutters for different occasions... The Tic Tac Toe with be great to use for Easter by making Easter Eggs as game pieces. The cupcake can be used for any occasion if you just cut off the heart and arrow before baking. The heart bunting would super cute for a baby shower. The mugs would look fun with steam rising out of them instead of the hearts. A cookie "flip" is a great way to get the most from your cutters.

Let's talk about royal icing transfers!
You may be noticing a theme, as I have included icing transfer sheets in the past 2 months as well. Making royal icing transfers is a great technique for a few reasons. If you don't have a projector, it takes the pressure off having to pipe directly on the cookie and getting it right the first time. It also allows you to make certain details ahead of time, which can really speed up the final process. When using transfers for letters, it also gives you the opportunity to space them out exactly where needed too.
If you want to use the transfer method for these cookies, simply print out the PDF found below. Printed as a PDF on standard printer paper (print at 100%, do not adjust/scale) will give you the correct size for the size of the cookies. You will then place this paper under a sheet of parchment or acetate, and pipe directly on the parchment or acetate.
Leave the transfers to dry overnight and simply peel them off when ready to use them.

5.Heart With Bow
For the video tutorial this month I decided to make the Heart With Bow, and also show you how to take the same cutter and turn it into an open box of chocolates. So it's a much longer tutorial this month, as we are basically making 2 different cookies into "one." I love the vintage vibe of the heart shaped box and the cute chocolates inside. Making the chocolates ahead is a real time saver, as you can drop them into the flood icing while it's still wet.
In the video I'll show you how to cut the dough out easily to make the 2 pieces. If you wanted to bake them together as one cookie you could do that too. I personally liked the idea of turning it into 2 cookies, and staging it with the heart sitting slightly on top of the other cookie so it truly looks like an open box.
