Strawberry Royal Icing
Perfect for any occasion, but especially fun for Valentine's Day cookies and other treats! Combine with our Strawberry Lemonade Sugar Cookie recipe to make a refreshing and sweet summer snack.
5 tablespoons Meringue Powder
4 tablespoons Freeze Dried Strawberry Powder
1 cup Warm Water
2 pounds Confectioners Sugar
In the bowl of a stand mixer, whisk the meringue powder with the water until a light foam forms.
Add in the dried strawberry powder and combine them together.
With the paddle attachment, beat for about one minute on medium-low speed until everything is combined, scraping the bowl as needed.
Add a pound of the confectioners sugar and mix just until incorporated. Scrape the bowl and add the rest of the sugar.
Once incorporated, increase the speed to medium-high and beat 5-7 minutes, until the icing has doubled in volume.
Use to decorate cookies. If a thinner consistency is needed, just add water a little bit at a time, and incorporate until the desired consistency is reached.
