Ingredients: Sugar, Meringue Powder (Corn Starch, Egg Whites, Sugar, Gum Arabic, Sodium Aluminum Sulfate, Citric Acid, Cream of Tartar, Vanillin), Corn Starch, Gum Arabic, Red 40, Red 3.

Frequently Asked Questions:

  • Can this icing be used to stencil, detail, AND flood?

    Yes, of course! Simply adjust your consistency as needed.

  • Does this icing mix taste bad?

    Not at all! This mix has a light vanilla scent and flavor, but you can always add the flavor extract of your choice during preparation to suit your tastes. Some people are more sensitive to red dye taste in general, however.

  • Once prepared, how long is the icing good for?

    Follow standard royal icing usage guidelines, which you can find here. General rule of thumb is up to 2 days on the counter, up to 2 weeks in the refrigerator, and several months in the freezer if you follow proper storage protocols.

  • This icing is very red. Will it bleed?

    The honest answer: possibly. As with any other highly-pigmented icing, color bleed is always a possibility. The best thing you can do is to take other precautions that can help mitigate the chance that the red color will bleed into adjacent icing (e.g. start with a base of white gel in other icing colors; pipe details onto a crusted--but not fully dry--base; etc.)

  • The bag doesn't re-seal. If I don't use the full bag of mix, how should I store it?

    You can place the full bag of mix into a larger Ziploc bag or other airtight container for storage. Keep the mix in its original packaging in order to retain Best By and Lot information.

Bright Color, Too Bitter

It makes a beautiful red color but I didn't taste or smell any vanilla. It was incredibly bitter - I made a batch and couldn't even use it. Had several other people taste it as well to make sure it wasn't just me and they all told me they'd never eat it on a cookie, even with some plain royal icing and vanilla extract added.

Taste is off-putting

The color is great, and the icing came together quickly just mixing by hand. It was a very deep red, but I ended up not able to use it for my cookies - the taste is awful. This might work for small details of red, but any more than a tiny bit would ruin a cookie. I tried diluting it with some of my own royal icing, but the chemical taste is still there.
